aviation sector (restaurants serving the airline and VIP flights and ground
with signs Caffé Lindo, E-Café Sky Café), and in the rail, marine, communities
(embassies, schools, private companies, hospitals), also associated services
including aerial specialist managed services “in flight” (Inflight), the sales
on board (Buy-on-board), the Off- taxes (duty free)) and remote support (remote
sites).

Key Duties and Responsibilities:
- Ensure that high quality food standard is
maintained - Mentor and train staff on hygiene basics and
related ISO and HACCP standards that should be maintained - Ensure that hygiene samples are sent to
hygiene auditors and airline clients - The jobholder will also ensure that suppliers
are visited and audited regularly - Receive incoming goods and verify the
quality, check expiry dates and ensure food safety - Keenly monitor projects to ensure that ISO,
HACCP and SOPs are followed - Ensure that all items stored are to the
required standards - In charge of monitoring of food production by
checking temperatures and time records - Ensure that all meals are weighed and
documents availed - Ensure that all staff are knowledgeable about
hygiene requirements and ensure that they are implemented - Regularly monitor chlorination of food and
works closely with the maintenance team - In charge of monitoring operational
procedures i.e. temperature controls - Ensure that FIFO and stock rotation is
followed - Ensure that all first Aid boxes are fully
stocked to ensure proper usage - Ensure that the Critical Control Points are
clean and up to standard - Ensure that airline specifications are
strictly observed by kitchen staff
Qualifications, Skills and Experience:
- The applicant should hold a diploma in food
science technology/ public health or food safety qualification - A minimum of five years’ experience as
quality controller in a food industry - Previous experience in agri-food industry is
mandatory - Knowledge of ISO 9001, and/or 22000 standards
would be much appreciated - Computer literacy skills
- Excellent command of both written and spoken
English
